Blackened Cajun Chicken


  • 4 skinless chicken thighs (you can buy them like this or just remove the skin or if you prefer have with skin on)
  • 3 tablespoons of Cajun spice
  • Olive Oil


Rub the chicken with olive oil on both sides, then sprinkle over the Cajun spice. Place a large frying pan on the heat and once smoking hot add the chicken and heat until cooked through, the Cajun will blacken on the outside  (around 40 minutes), if unsure use a meat thermometer or cut through the middle to check if cooked through.

Serve with you choice of rice or potatoes and salad.
