This is a naughty snack, but hey it’s good to be naughty now and again and the delicious homemade guacamole balances out the naughty nachos.
Ingredients
- A bag of tortilla chips
- 2 large ripe avocado
- The juice of 1 lime
- Salsa
- Grated cheese enough to cover the top
- A handful Fresh coriander chopped
- A small red onion finely chopped (if you don’t have this use spring onion)
- 1 chilli deseeded and chopped (we leave the seeds in as we like it hot)
- 1 large ripe tomato
Scoop out the flesh from the avocados and place into a bowl retain one stone. Chop the tomato and add along with the onion. Mix in the squeezed lime juice and coriander. Mash it all together.
Place the nachos in an ovenproof dish or small roasting tin. Spread the Guacamole over the nachos and sprinkle over the cheese. Bake in the oven for approx 15 mins until melted.
Add salsa and dip in.
If you have any guacamole left store in a sealed container in the fridge with the stone to prevent it from going brown.
