There’s nothing like picking up some fresh fish and cooking it the same day. These are just gorgeous cooked on the BBQ, but if we can’t do this (I say we because Paul becomes chef when it comes to outdoor cooking and I just do the prep) they can also be pan fried.
Try and buy these already gutted and scaled otherwise it’s a messy job.
- Fresh sardines (enough for 2 people) normally about 4 each dependant on size
- Rock salt and olive oil
- 2 cloves of garlic crushed
- Fresh lemon
Rub the sardines with oil and sprinkle with salt. Place the oil in a pan
and heat don’t get it too hot or the garlic will burn when added , add the sardines and garlic cook for around 4 mins per side until the flesh has turned white.
Serve with freshly squeezed lemon and serve. We love to eat these with new potatoes baked in their skins (I will add this recipe soon)
